Thanks for your prompt reply and your advice. I will definitely try it. I have the same problem as you with having half a lemon go bad. I suspect that freezing may change the taste of the pith. Also any help with cancer prevention is welcome.
Lemons are so very useful. If I use a lemon just for the juice and zest I put the rest of it into my batch of homemade iced tea. It gives the tea a nice mild lemon taste. When the tea is finished I put the used lemon in my garbage disposal for a fresh smell in my sink.
Hi Elaine! I don't. I've begun to think that different people's taste buds are not the same. Kind of how some people really like one perfume, but others think the same perfume is stinky. I don't find the pith to be bad tasting. If I'm eating a grape fruit I actually enjoy eating the sweet pith. One factor to remember is that when a frozen lemon in grated you are getting not only the the zest but the pith, the membrane, all of the juice and also any seeds, too (unless you notice them and remove them). I believe those parts of the lemon are healthy to eat. I remember reading somewhere that the pith also contains a cancer fighting/preventing ingredient that people should be eating. I can only suggest that you freeze one lemon and try it out to see if it works for you. The flavor is a little more robust than simple lemon juice because of the zest but you can see the percentages right on the lemon -- the majority is the center juicy part and a small percentage is the peel and pith. I hope you try it to see if you like it or not. The taste is different but not so much that it is off putting. At least that is what I think. Blessings to you!
