Well, that's a good idea...just a touch of red food coloring..
I did move my rhubarb this spring , out of the raised bed and placed it into the side yard..
We do not have red rhubarb, either, so after I chop the stalks, I drizzle a few drops of red food color over it & stir to spread it around the rhubarb.
Allow to sit for a few minutes to soak into the rhubarb a little. Then, continue with the rest of the recipe.
Too much food color will of course give you a pink custard layer.
