rhubarb dream bars
My neighbor gave me a rhubarb plant. I planted it in my raised garden and Wah-LA, I had rhubarb! I printed up a half a dozen or so, of rhubarb recipes and waited for it to be ready to pick. I waited and waited. Finally I asked my neighbor when will this get ripe as it was mostly green with very little red in it. (My grandmother's rhubarb had bright red stalks.)"Its been ripe." she said."It is not that variety. This has very little red in it." So anyway, I have green rhubarb that was starting to get pithey. I decided the pie was out.. so I had enough rhubarb to make this recipe..I thought it looked a little weird, not all red, but the guy's loved it and asked for more. They ate it all up. Ingredients
- 2 cups all purpose flour
- 2/3 cup powdered sugar
- 1 cup butter, softened
- 2 cups white sugar
- 1/2 cup all purpose flour
- 1 1/2 teaspoons salt
- 4 - eggs, beaten
- 5 cups chopped fresh rhubarb
- - opt: nutmeg
How To Make rhubarb dream bars

Step 1Preheat oven to 350 degrees. In a medium bowl, mix together 2 cups flour, powdered sugar and butter until it forms a dough, or small crumbs. Press into the bottom of a 9 X 13 inch, greased baking dish.

Step 2Bake for 10 minutes in the preheated oven. While this bakes,whisk together the sugar, salt, flour and eggs in a large bowl. Stir in rhubarb to coat.

Step 3Spread evenly over the baked crust when it comes out of the oven. Do not let the crust cool.

Step 4Return to oven and bake for another 35 minutes,or until rhubarb is tender. I had to add another 10 minutes. Add nutmeg as an option. Cool and cut into squares to serve.
