They turned this color only after 3 days if you leave them longer more of the beet color will absorb.

I don't have a zester so what i do is just use a vegetable peeler and peel of the zest. make sure to try and not get any of the white rind. Just throw in the zest whole you don't have to chop it or anything like that.
