This was my version of Karen's Beef and Cabbage soup... basically, I sub'd stuff that I had on-hand: I used leftover roast cut up in cubes, instead of the ground beef. I only had Great Northern Beans, so they were sub'd for the dark kidney beans. I used scallions (3) instead of onion, and left out the can of tomato sauce, as it was too much acid for my stomach with the other can of tomatoes already in it. I also added a couple tbsp. of julienned carrots, for color. At the end, I dumped about a cup of leftover rice in it to make it go farther (I want lots of leftovers! ha!) The soup was AWESOME.
