I grew up eating caldillo in my Mexican-American, Southern California home. We were poor, so ground beef was used. It was made with whatever broth we had on hand, including a mix of chicken broth, beef broth and Lipton onion soup mix. The ESSENTIAL ingredient was fideo. Sauté and drain fideo first. Chop potatoes and par-cook in microwave. Brown ground beef, add canned tomatoes and potatoes to beef. Add any/all broth to pot and bring to simmer. Add the fideo to simmering soup. Once the fideo is tender and you’ve seasoned it to your liking, serve it up. Mexican beef noodle soup. My grandmother also made “Mexican spaghetti” with fideo.
