Pinterest Pass or Fail: Sweet Potato Toast

If you’re like us, we’ve been hearing a lot about sweet potato toast lately. Search it on Pinterest and you’ll see many, many different recipes. In the Test Kitchen, we decided to give it a try and see what all this buzz was about. Is sweet potato toast everything everyone says it is? Long story short, yes!

How To

There are three methods to cooking sweet potato toast. Each starts the same way.

Thoroughly wash the sweet potatoes.

Cut ends off both sides. Then slice the sweet potatoes lengthwise 3-4 mm wide.

Next is where things switch around.

Method 1. Baking Sweet Potato Slices
Brush sweet potato slices with olive oil.

Bake at 375 for 20-25 minutes. Flip slices halfway through.

Method 2. Baking Sweet Potato then Toasting
Bake sweet potatoes following Method 1. Then place baked sweet potato into a toaster.

Toast on the highest setting two times or until crisp.

Method 3. Toasting Only
Places slices of raw sweet potato into toaster.

Toast on highest setting until cooked through.

The Result: Pinterest Pass

We liked Method 2 the best. The sweet potato is already cooked, so basically you are crisping it to your liking. It’s very easy to pick up with your hands and eat without a knife and fork. We found in Method 1, the sweet potato gets golden brown but is on the softer side. You had to eat it with a fork. Method 3 was the easiest, but we had to toast it many, many times to get the inside cooked enough. But, then we felt the outside got a bit too crisp.

Toppings

Here’s where the fun part begins… Sweet, savory, Paleo, gluten-free or low-carb, the combinations are endless! We tested a few we found in Pinterest-land. The herbed cream cheese and all the sweeter toppings were our favorite, but open your fridge and pantry and see what combinations you can come up with.

Herbed Cream Cheese
Top with herbed cream cheese, cucumber, smoked salmon, dill, cracked pepper and fresh squeezed lemon. Soft poached egg optional.

Diced Avocado
Top with diced avocado, sliced Roma tomatoes, cracked pepper, and more thinly sliced avocado. Again, soft poached egg optional.

Cream Cheese
Smear cream cheese. Add sliced strawberries. Drizzle equal parts balsamic vinegar and honey with a squeeze of lemon. Finish with sliced basil.

Almond Butter
Spread almond butter. Top with thinly sliced honey crisp apple, toasted coconut and toasted almonds.

Peanut Butter
Top with peanut butter, banana slices, and pecans. Drizzle honey.
