zucchini cut in 1/4 inch rounds

pods okra cut in 1/2 inch rounds

red tomato diced

fresh stem organe

steams thyme
salt and ground black pepper

Directions Step-By-Step

In a large skillet with deep sides, heat the olive oil over medium heat.

Add the onion, garlic and cook stirring often until onions are softened 3 to 4 minutes. Add okra and tomatoes stir until coated with olive oil cook 5 minutes

Stir in the herbs and season with salt and freshly ground pepper. Lower heat and cook until okra is tender 6 to 8 minutes.
