Found this simple recipe on the back of a can of tomatoes. I LOVE tomato basil soup, always order it in restaurants if they have it.

Stove Top

Ingredients

1 Tbsp
olive oil
1 medium
onion, chopped
2 stalk(s)
celery, chopped
1 medium
carrot, chopped
2 clove
garlic, minced
2 can(s)
(14.5 oz.ea.) diced tomatoes, undrained
1 tsp
dried basil, crumbled
3 c
reduced sodium chicken broth
salt and black pepper to taste

fresh basil leaves, julienned

Directions Step-By-Step

In a large saucepan over medium-high heat, add oil and saute onion, celery, and carrots until tender, about 5 minutes. Add garlic and cook another minute.

Add the diced tomatoes, dried basil, and chicken broth and bring to a boil.

Reduce heat to low and simmer for 15 minutes or until vegetables are soft.

Ladle into bowls and garnish with fresh julienned basil. Serve hot.
