Found this jewel in the latest issue of Taste of Home. Soup is a good thing, right? Any time of year. And when prepared in your slow cooker you don't have to heat up the kitchen when the weather is warm.

Slow Cooker Crock Pot

Ingredients

2 - 3 c
cut-up chicken breasts, boneless and skinless
2 c
chicken broth
1 can(s)
(14.5 oz.) diced tomatoes, undrained
1 pkg
(10 oz.) frozen corn
1 1/2 c
cubed red potatoes
1 medium
onion, chopped
1 medium
sweet red or yellow pepper, chopped
1 medium
green pepper, chopped
1 can(s)
(4 oz.) chopped green chilies
1 tsp
ground cumin
½ tsp
garlic powder
¼ tsp
freshly ground pepper
1 tsp
salt
1 1/2 c
fresh baby spinach

Directions Step-By-Step

In a 4- or 5-quart slow cooker, combine the first 13 ingredients. If desired, cut chicken into bite-size pieces.

Cook, covered, on LOW for 8-10 hours or until potatoes are tender. Stir in spinach and cook until wilted, about 5 minutes. Serve immediately.
