Pat's notes for this recipe:
This is my grandmother's recipe, Mrs. Burgkoffer ,who was born in Germany. My dad did not like this soup , but my grand father loved it.

Put livers, onion and crackers through food grinder. Add beaten eggs, flour, salt, parsley and pinch of pepper, and mix well. Drop by teaspoon into 2 quarts of boiling chicken broth and simmer for 30 minutes.
If you drop them in the broth and it doesn't stay together, add a few more cracker crumbs.

my mother is Hungarian and she always made chicken liver dumplings with her chicken soup. i never much cared to it, but it was a huge dumpling in the middle of your bowl of soup. when my grandfather lived with us, she always made this for him a few times in the winter. he loved it!

Wow Pat this brings back memories for me. I have had Liver Dumpling Soup one time. I was probably 13 years old, my family was getting ready to move to California. I stayed with my cousin and her family for about a week. My Aunt Alberta came over for the day, she and my cousin Marney, made Liver Dumpling Soup. It was an all day process as I recall. But well worth it, as I loved it. But I like liver. Yum!
Thanks for posting and bringing back fond memories
