Southern Potluck Pineapple Casserole

- cans chunk pineapple in juice (no sugar added), well drained

- self-rising flour

- grated sharp cheddar cheese
- 2 c
- crumbled ritz crackers (approximately 1 sleeve)
- 1/2 c
- (1 stick) country crock spread or margarine, melted
1Mix together drained pineapple,splenda,flour, and cheese. Pour into an 8x8" baking dish lightly sprayed with non-stick cooking spray.
Combine Ritz cracker crumbs and melted margarine,tossing with a fork to moisten all the crumbs. Top the pineapple mixture evenly with the cracker crumb mixture. Bake at 350 degrees for 25-30 minutes until heated through.
