Christine's Notes:

Still on my grilled cheese kick this weekend, we tried these for lunch today. I love jalapeno poppers and this is such a creative idea incorporated into a sandwich. Yum!!

 

Directions

Simple as any grilled cheese sandwich. In a skillet on medium high add 1 slice of bread buttered side down. place your cream cheese, jalapenos, and cheddar cheese on top. Add other slice of bread butter side up and cook until both sides are golden brown. (Keep your jalapeno in the middle of your stack so your cheeses melt).

I want to try this, think I will leave out the other cheese and just use cream cheese to make it more like a popper which is one of my favorite things :). Thanks for the recipe

LOL! Thanks Cathy. I did some fooling around over the weekend with different types of grilled cheese sandwiches. It was fun and tasty :)

christine, next time you get on a grilled cheese kick, here are two variations that are faves of mine: grilled swiss with tomato on rye bread (from a diner back east in the 70s); and plain grilled cheese with salsa in between the cheese slices (sloppy to eat for oh! so good). have got to try this one soon! tx :)
