- 1 small
- eggplant (normal small, not the mini)
- 1/2 c
- 1 large
- beaten egg
- 1 Tbsp
- 1 c
- finely crushed cheez-its crackers, regular of spicy
- vegetable oil for frying
Cut slices in 1/2-inch strips.
Soak in salted ice water for 30 minutes; dry with paper towels.
Roll in cornstarch, dip in egg mixed with water; then roll in cracker crumbs. Shallow fry in hot oil to brown about 40 seconds.
Drain on paper towels.
Sprinkle with salt , cinnamon sugar or drizzle with honey, if desired
