- good-sized beets
- 4 Tbsp

- 1/4 tsp
- extra virgin olive oil to lubricate pan
1Boil beets until tender, rub off skin, and mash to a smooth pulp
2Blend flour, cream, eggs, salt, and pepper. Mix in beets.
3Cook like pancakes on a hot greased pan. Serve.
