Theses are always a great hit at parties and a wonderful way to get people who don't normally love spinach to eat it. A walk around party hors-d'oeuvre that can be made ahead of time to leave the hostess with more time the day of the party. They got their name because Popeye always eats his spinach out of a can- YUK- and these are so delicious that he can eat his heart out longing for these instead!!

Ingredients

2 box
spinach, 10 oz each, moisture squeezed out completely
4 large
eggs, beaten
1 large
onion, minced
2 c
pepperidge farm herb seasoned stuffing mix (be sure the bread is crumbled – not the large cubes)
1/2 c
parmesan cheese
3/4 c
butter, melted
1/2 tsp
salt
1/2 tsp
black pepper
1/2 tsp
garlic poweder

Directions Step-By-Step

Mix all ingredients together and form into small balls. Place on baking spray lined baking dish. Cover with plastic wrap.

Chill in refrigerator for at least 1 hour.

Bake at 350 degrees for 20-30 minutes. Can be served hot or warm.
