Ingredients

flour tortillas
1 Tbsp
olive oil, extra virgin
5 medium
mushrooms, fresh
3 small
whole bell peppers or 5 mini bell peppers
1 Tbsp
honey barbecue sauce
6 slice
rotisserie chicken, deboned
1/2 c
brown or white rice

Directions Step-By-Step

Preheat oven 400 F. Place flour tortilla in a dry sm. cast iron skillet. Bake for 10-12 min. until browned and crispy then remove from skillet.

Pour 1 Tbsp. Extra Virgin Olive oil into skillet and fill w/ chopped yellow, green, red, or orange bell peppers, & sliced mushrooms then sautee approx. 5 min. and add 3/4 c. cooked brown rice. cook 5 min. stirring w/ fork. Remove from heat and fill Tortilla Bowl.

Place 1 Tbsp. Honey Barbecue Sauce in center of rice medley. Slice Rotisserie chicken adding to top. Serve & Enjoy the eatable Bowl between bites. ' And Yum its all good'.
