I make the pimento cheese spread from scratch, fry the squash fresh. This is a delightful summertime sandwich.

FRIED SQUASH

1-2
yellow squash, sliced into rounds

eggs, beaten
1 c
flour
1 c
panko bread crumbs
mrs. dash original blend

Directions Step-By-Step

Pimento cheese spread with fresh garden veggies
For this sammie I added 5 slices of cooked, crumbled bacon to the pimento cheese recipe.

Using three seperate pie plates, beat eggs in one, place flour in one, and panko in one. Season all three with Mrs. Dash original blend spice.

Slice yellow squash, dip in flour, then eggs, then panko bread crumbs. Fry in about 2" of canola oil for a couple minutes on each side.
