grape tomatoes (half a pint)
goat cheese (use honey goat cheese for a great flavor combination!)
Cut tomatoes in half. Add to mixing bowl. Add salt, pepper and basil. Use a spatula to slightly bruise the tomatoes, and mix well.
Add cubed mozzarella. Mix well.
Add olive oil to bottom of baking dish. Pour in the tomato mixture.
Top with shredded mozzarella cheese. (optional - on top of this, I added a dash of the dried basil).
Top this with thin slices of goat cheese.
Cover and bake for 12 minutes. Take off the cover, return to oven and bake uncovered for 5 additional minutes.
Done! Serve immediately.
