Goat Cheese Caprese Dip

Classic caprese combo; the addition of goat cheese adds a sweetness. Delish!

Ingredients

1 c
grape tomatoes (half a pint)
4 oz
cubed mozzarella
2 oz
shredded mozzarella
2 oz
goat cheese (use honey goat cheese for a great flavor combination!)
1/4 tsp
salt
1/4 tsp
pepper
1/4 tsp
crushed basil
1 Tbsp
olive oil

Step-By-Step

1Preheat oven to 375.
2Cut tomatoes in half. Add to mixing bowl. Add salt, pepper and basil. Use a spatula to slightly bruise the tomatoes, and mix well.
3Add cubed mozzarella. Mix well.
4Add olive oil to bottom of baking dish. Pour in the tomato mixture.
5Top with shredded mozzarella cheese. (optional - on top of this, I added a dash of the dried basil).
6Top this with thin slices of goat cheese.
7Cover and bake for 12 minutes. Take off the cover, return to oven and bake uncovered for 5 additional minutes.
8Done! Serve immediately.
