Summer layered potato salad

A wonderful layered potato salad to bring to a BBQ.

Ingredients

2 lb
red potatoes, quartered
1/2 c
real mayonnaise
1/2 c
light sour cream
1/2 tsp
garlic powder
1/4 tsp
each, salt and pepper
4
hard boiled eggs, peeled, chopped
1/2 c
shredded, cheddar cheese
2
scallions, sliced
3
celery stalks, chopped
1/4 c
real bacon bits, i used hormel bacon bits

Step-By-Step

1Place potatoes in lg pot, cover with water. Bring to a boil. Cook until fork tender, about 15 mins. Drain, let cool.
2Place potatoes in lg serving bowl. In bowl, whisk together mayonnaise, sour cream, garlic powder, salt and pepper. Add 1/2 the dressing to potatoes, stir to combine.
3Layer potatoes with eggs, then celery, then cheese, then scallions, then bacon bits. Pour remaining dressing over salad. Refrigerate until serving.
