I love this recipe. Easy to remember and easy to change to your liking. I eat one cup of this on a bed of baby greens.

Ingredients

all organic
4 c
quinoa, cooked and cooled
1/2 large
cucumber, diced
1/2 pt
grape or other small tomatoes, quartered
1/2 medium
red onion, diced
1/4 c
kalamata (greek) olives, quartered
4 oz
feta cheese, crumbled or diced
2 clove
garlic, diced very fine
2 Tbsp
bragg's olive oil
2 Tbsp
bragg's apple cider vinegar
1/4 c
fresh basil, chopped fine
salt and pepper to taste

Step-By-Step

1Mix all the above ingredients together in a large mixing bowl. Allow to "marry" overnight.

2Feel free to adjust ingredients to your liking. This recipe is loaded with good proteins and good fats. Enjoy!
