German Cucumber Salad
A friend from Germany served this at a neighborhood party. Everyone loved it but when asked for the recipe, she said her mother made this during world war II and this was made from memory. She just experimented until the flavor was as she remembered it. She came to my house to show me how to make the salad and as she measured the ingredients, I wrote amounts, ingredients and method of preparing and this has been a favorite dish at church, family gatherings, etc.
- 5 or 6 cucumbers
- liberal sprinkling of dill weed
- 2 teaspoons salt
- 1/2 grated onion
- 1/3 cup plus 3 t. white vinegar
- 1/3 cup oil
- 1/3 cup hot tap water
1slice cucumbers thinly, add salt, onion, and dill weed. Let mixture set for about 30 minutes.
2When above ingredients have marinated 30 minutes pour vinegar, oil and water over and cover.
3This salad is best if refrigerated overnight. May be served cold or room temperature.
