I like to make this salad when I have a heavy meal planned. This is light and creamy. Not too sweet. It's a vintage recipe from another Amish friend of mine. Where else? What's funny about this salad is that it's something men seem to enjoy. MAKE THIS SUGAR FREE by using sugar free cool whip and sugar free jello. Very good for diabetics!
In saucepan, bring pineapple with juice to a boil. Stir in gelatin until dissolved. Remove from heat; Stir in buttermilk. Cool to room temp. Fold in cool whip. Pour into a 2 qt. (I use 9x9)baking or serving dish. Refrigerate for 4 hours. Cut in squares. serves 9-12.
NOTE:To make sugar free, use sugar free orange jello and sugar free coolwhip. EASY!
