My son and roommates love this recipe, especially on a croissant.

Ingredients

2 1/2 c
grilled chicken breasts, cut into bite sized chunks
1/3-1/2 c
mayonnaise
1/4 c
dijon mustard
1 1/2
ribs of heart of celery stalk, diced
1 c
seedless red grapes, halved
1/2 c
walnut halves, rough chopped
2 1/2 tsp
dried thyme
salt and pepper to taste
6-8
lettuce leaves
3-4
slices of avocado per sandwich

Directions Step-By-Step

Once the chicken has been grilled and chopped. In a medium mixing bowl, add all ingredients and mix well, making sure that all the chicken is coated. Let set in refrigerator until well chilled. Serve on croissant with lettuce and avocado.
