MCAD Friendly Meat Loaf

One of my children was born with a fatty oxidation disorder, leading me to change many of my old favorite standby's to meet the standards of his low fat,coconut oil-free diet. This meat loaf is one of the results of those changes and has become a family favorite.

Ingredients

2 lb
ground turkey
3 Tbsp
canned diced green chiles
1/2
onion,diced
1/2 c
saltine cracker crumbs
1
egg
ketchup
2 slice
turkey bacon
salt and pepper to taste

Step-By-Step

1Crumble ground turkey into a large bowl
2Add green chiles,onion,cracker crumbs, and egg, and mix thoroughly.
3Shape into a loaf on a baking sheet and bake at 375 degrees for approximately 1 hour. This may take longer depending on loaf size and thickness.
4Spread ketchup over top and place bacon strips on top of loaf. Return to oven until bacon is cooked.
5Slice and serve.
