Low Carb Wheat Free Meatloaf-- Full Flavored!

I know, not another meatloaf recipe, right? This is for those of us that have to have low carb or gluten free meals. My old standard way of making meatloaf usually involved, crackers, bread crumbs or some other glutenous product. So when my son asked for meatloaf I had to find a way to make it wheat free but still packed with flavor. This turned out so well that I think that those that don't need the diet restrictions will love it too!

Ingredients

2 lb
ground sirloin
2 slice
uncured bacon, uncooked and diced
2 large
eggs
2 Tbsp
ground flax seed
1 Tbsp
mrs dash garlic & herb
1 Tbsp
worcestershire sauce
1/4 c
pepper jack cheese (i diced up 3 sandwich slices of pepper jack)
6 oz
can organic tomato paste
1/3-1/2 c
diced tomato, green pepper, and onion mixture (i buy this prechopped at the store but you can diy)

Directions Step-By-Step

Preheat oven to 375 degrees F. Lightly spray a loaf pan with nonstick.

Combine all ingredients in a large bowl; press into loaf pan. * I pressed it in so it binds together better. *

Bake for 70 minutes or until done. Slice and serve.
