Healthy Ground turkey and spinach lasagna

- 1/2 lb
- ground turkey breast
- 1 Tbsp
- olive oil
- 26 oz jar marinara sauce
- 14-1/2 oz can diced tomatoes
- 9 oz pkg oven-ready lasagna noodles
- 2 c
- part-skim ricotta cheese
- 8 oz pkg reduced-fat, shredded mozzarella cheese
- 10 oz pkg frozen, chopped spinach, thawed, squeezed dry
- 4 Tbsp
- grated parmesan cheese.
1Spray a lg skillet w/ cooking spray, place over med-high heat. Saute turkey in oil until browned. In lg bowl, combine cooled turkey, marinara sauce, and tomatoes.
2Spray a 4-quart slow-cooker w/ cooking spray. Pour 1 cup turkey mix into cooker. Layer on 3 noodles, ricotta cheese, mozzarella cheese, spinach and more sauce.
3Repeat layers 2 times, ending w/ sauce. Cover, cook on low for 2-1/2 hrs. Sprinkle w/ parmesan cheese.
