Hummus Pita Sandwich

Basic yummy sandwich that is good for packing on the run (no meat or mayo to spoil). You could easily add fresh or dried herbs, such as basil, to liven it up. I often make this without the green onion.

Ingredients

soft pita (i prefer papa pita brand from costco)
Some
athenos brand hummus
Some
purple cabbage shreds
Some
sliced tomato
Some
green onion, or other fresh or dried herbs (optional)

Step-By-Step

Step 1 Direction Photo

1Place pita on plate. :) (Wanted to be able to show you a picture of the brand of pitas I like.)

Step 2 Direction Photo

2Spread pita with a thick layer of hummus over whole pita.

Step 3 Direction Photo

3Place veggies & herbs, if using, on half the pita.

Step 4 Direction Photo

4Fold in half.

Done.
