Guinness-braised short ribs

I have not tried this particular recipe YET. I will try it around St. Patrick's Day. This recipe comes from my hometown newspaper "The Winnipeg Free Press" from the column "Recipe Swap" .
I always make an Irish stew for St. Patrick's Day. My husband and his family are half Irish. I hope you give this recipe a try.

Method:

Slow Cooker Crock Pot

Ingredients

2 onions, thinly sliced
2 carrots, diced
1 rib of cery, diced
3 cloves of gasrlic, minced
2 bay leaves
2 tbsp paprika
1+1/4 tsp salt
1/2 tsp pepper
2 cups of beef broth
1x4-440 ml can of guinnesds beer
4 tbsp tomato paste
1 tbsp dijon mustard
1 tbsp liquid homey
3 lbs beef short ribs

Directions Step-By-Step

In a slow cooker, combine onion, carrots, celery, garlic, bay leaves, paprika, salt & pepper.

In a small bowl, whisk together beef broth, beer, tomato paste, mustard & honey: pour into slow cooker.

Submerge the ribs in the liquid. Cover and cook on low for about 7-8 hours, or until the meat is tender enough to pull away from the bone.

Discard bay leaves and skim off the fat.
