Wow! Who would know that a quinoa pie crust would be so tasty? This pie tastes great AND is healthy. A great combination! I added a bit of mustard with mine and loved it.

Ingredients

PIE CRUST

2 c
cooked quinoa
1
egg
1/2 c
parmesan cheese

FILLING

1 large
onion diced
3 clove
garlic chopped
1/2
diced red pepper
3 medium
carrots grated
3 large
kale leafs chopped up fine
2 lb
ground beef
1/2 c
old cheddar cheese
1/2 c
marble cheese
2/3 c
mozzarella cheese

eggs
1/2 tsp
favorite seasoning greek seasoning

Directions Step-By-Step

When cooking Quinoa add a little extra water and let it sit for an extra 10 minutes to soak up extra water. When Quinoa is warm to touch mix in Parmesan cheese and beaten egg Mix really good so that some of the Quinoa gets mashed. Press into a large greased pie plate site to the side

While your Quinoa is cooling brown onion, garlic. Add Kale,carrots and red pepper cook for about 5 minutes then add hamburger cook until all hamburger is cooked thoroughly. We all like to cook with different temperature time will vary

remove from heat let cool for about 5 minutes I keep my grated cheese in the freezer so it mixes up really nice . Mix in all cheese and spice you would like stir in beaten eggs really quickly then put filling into Quinoa Pie Crust place in oven on the lowest rack of a 350 degree preheated oven (this is so the Quinoa will have a crunchier crust). pull out of oven let cool for about 20 minutes serve with ketchup / mustard

You can add what ever vegetable that you like, make sure they are in small size , as well you can use what ever kind of meat you would like I have made Turkey before as well
