Adobong Isda - Fish Adobo

Adobo is usually chicken or pork but this time it's fish.

Ingredients

3 lb
trout, bluefish or similar fish, dressed
1 Tbsp
finely minced garlic
1/3 c
apple cider vinegar
1/4 c
water
1 Tbsp
salt
1/4 tsp
freshly ground pepper
1
bay leaf
3 Tbsp
vegetable or corn oil

Step-By-Step

1Combine all ingredients in a saucepan except the oil. Marinate for one hour.
2Bring to a boil. Cover and simmer for 5 minutes.
3Remove fish and set aside. Reduce sauce to half and set aside.
4Fry fish in hot oil till it is brown, and pour sauce in with fish. Simmer for 3 minutes and serve hot.
