St. Pat's Green Chicken Chili

Ingredients

1	already cooked rotiserie chicken shredded
10 c	chicken stock
2 can(s)	tomatillos or 1 1/2 freshed poached
2	chopped seeded green pepper
1 lg	chopped onion
2 clove	garlic,chopped
2 md	seeded chopped jalepeno peppers
2 can(s)	white beans
1 can(s)	white corn
2 sm	cans chopped green chilis
1 bunch	fresh cilantro
1 bag(s)	shredded cabbage (coleslaw mix no carrots)
1 tsp	cumin
1 tsp	adobo

Lisa's Notes:

Starting my menu for St. Patricks day. This was the highlight of last years party. In fact my nephew and my children have been asking me if Im going to make this again. Of course I am! Nothing makes me happier than seeing my family enjoy my recipes. Although It may sound like your typical chicken chili, I have turned into a green irish like stew, with a few added tweeks.

Directions

In frying pan of olive oil (2tbls) saute onion garlic peppers till softened.
Add to crockpot.

In food processor puree tomatillos, green chilis & cilantro.
Add to crockpot.

To crockpot add drained cans of beans and corn, cabbbage, shredded chicken. Pour chicken stock over and spices.
Set on med for 4 hours stirring occationally.
Enjoy with nachos or over rice.
