Avocado Green Goddess Spring Chicken Salad

Ingredients

5 small
anchovy fillets
1 clove
garlic
1/3 c
fresh parsley,chopped
1/3 c
scallions,chopped
3 Tbsp
fresh tarragon,chopped
3/4 c
mayonnaise
3/4 c
sour cream
1/4 c
fresh lemon juice
1 small
ripe avocado,divided
1/2 tsp
cracked black pepper
1/2 tsp
salt

SALAD

1 small
rotesserie chicken
1 large
english cucumber
2 small
ripe avocados
1 large
boston bibb lettuce
4 large
strawberries, fresh

Directions Step-By-Step

In a food processor or blender combine all dressing ingredients except avocado, black pepper and salt. Peel and chop half of the avocado and add to the mix. Reserve other half. Puree to blend. Season with cracked black pepper and salt to taste . Chill at least 1 hour.

When ready to serve prepare the rest of the salad.
Slice ½ inch pieces off chicken and chop into 1 inch pieces and place in a medium sized bowl. Add to this the cucumber which has been quartered and sliced into ½ inch chunks . Peel the 2 avocados and chunk into ½ inch pieces. Add about half of the dressing and fold gently with a spatula. Add more dressing to desired consistency and fold.

Place the individual lettuce leaves on serving platter or individual plates and add a scoop of chicken salad to each. Slice the reserved avocado half and slice into 8 pieces. Garnish with sliced avocado and also fresh berries if desired.
Serves 4 as a main dish.
