DELICIOUS !!!!

For awhile I was making 10 of these pies for my church at the "Thanksgiving Dinner".

Ingredients

pie crust --- top & bottom
2 c
raisins
1 1/2 c
cold water
1 c
sugar
4 Tbsp
cornstarch
2
juice of 2 lemons
lemon rind of 1 lemon
1 Tbsp
butter
1
egg, beaten

Directions Step-By-Step

Preheat oven: 450 degrees.... Prepare crust & place in bottom of "deep dish" pie dish; set aside.

In medium saucepan add water, raisins, sugar & cornstarch. Cook until thickened.

Remove from heat- stir in the lemon juice, lemon rind, butter & beaten egg.

Let cool somewhat & then spoon into bottom pie crust. Place a top crust on & prick with fork to make holes. if desired sprinkle top with a little sugar.


Bake for 25 minutes.
