The title says Impossible- but this is in no way impossible. Anything is possible with Bisquick baking mix!!

Ingredients

2 c
milk
1/4 c
margarine or butter
1/2 tsp
vanilla
1 tsp
coconut extract
4 large
eggs
1 c
shredded or flaked coconut
3/4 c
granulated sugar
1/2 c
bisquick baking mix

Directions Step-By-Step

Heat oven to 350^. Butter a 9 or 10- inch pie plate. Place all ingredients in blender container. Cover and blend on high 15 seconds. Pour in buttered pie plate. Bake until knife inserted in center comes out clean. 50-55 minutes; cool.

Each blender or food processor is different therefore it may be necessary to blend longer in order to get the right consistency for you pie..God bless you for making this pie and I do hope you try this again..Merry Christmas Carol and family..hugs0000

I blend all the ingredients except the bisquick for 30 seconds. Add the bisquick and blend for only 15 seconds on medium speed. This ensures that eggs, etc. are fully blended together and you get a creamy, smooth custard. Otherwise, I found I had to blend longer if I put everything together at once, and the result was a kind of cake-pie.
