I love coconut pie. This is one of the best and easiest to make.

Ingredients

1 1/2 c
sugar
2 large
eggs
pinch
salt
1/2 c
butter, melted
2 Tbsp
flour, self-rising or all-purpose
1/2 c
evaporated milk
1 1/2 c
angel flake coconut
1 tsp
vanilla extract
1 large
unbaked pie shell or 2 small

Step-By-Step

1Beat eggs, sugar and salt until mixture is lemon colored.
2Add butter and flour.
3Add milk, vanilla and coconut.
4Pour into pie shell(s) and bake at 325 degrees for about 40 minutes.
