praline bananas foster cakelettes
This is an amazing dessert that looks so fancy and tastes incredible. This recipe is based of my grandma's banana cake I used to eat. The dark rum makes this fun twist to bananas foster to die for.

When served these are VERY impressive! The cake alone is amazing. Add the sauce with the wonderful combination of flavors from rum and the vanilla... wow. The candied pralines top this perfectly. I'd recommend using a 2" sheet pan if you have it. If not, put some aluminum foil under the pan to protect the oven (I did have some minor spillage). I can't wait to make these again!

Ingredients
- 1 cup sugar
- 1 cup packed brown sugar
- 1/2 cup mashed bananas
- 1/2 cup instant french vanilla pudding mix
- 2 tablespoons vegetable oil
- 2 teaspoons pure vanilla extract
- 2 tablespoons ground cinnamon
- 4 - eggs
- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- FOR THE SAUCE
- 1 cup salted butter
- 1 cup packed brown sugar
- 2 teaspoons ground cinnamon
- 1/4 cup good dark rum
- 2 teaspoons pure vanilla extract
- GARNISHES
- - store bought cinnamon sugar pralines
- - sliced bananas dipped in lemon juice to preserve texture and color
How To Make praline bananas foster cakelettes

Step 1Preheat oven 350 degrees and prep a full 2" sheet pan with baking spray. Place flour, soda, powder, and salt in a sifter. Sift into dry ingredients bowl. Set aside.

Step 2In a mixer, place both sugars and add mashed bananas. Mix in vegetable oil then french vanilla pudding mix.

Step 3Mix in eggs, then add cinnamon and vanilla extract. Slowly store in dry sifted ingredients. When batter is mostly incorporated, mix thoroughly by hand.

Step 4Bake 350 degrees 20-25 minutes until center springs back. Allow to cool thoroughly.

Step 5For the sauce In a medium pot on medium high heat, melt butter, then add brown sugar and cinnamon. Bring to a boil 5-7 minutes, stirring often. Remove from heat. Add dark rum and vanilla extract. Place pot back on warm burner and place 2 sliced bananas into the mixture to warm. Remove from heat and set aside.

Step 6Assembly: Using a 3" circle cutter, but out circles from sheet pan. Set 1 circle on center of plate. Place soaked war, bananas on cake and drizzle with sauce. Take coarsely chopped pralines and sprinkle on top of bananas. Take second circle of cake and place on top of banana layer. Generously pour bananas foster sauce on top and garnish with more chopped pralines.
