Ingredients

2 c
flour
2 tsp
baking soda
2 tsp
cinnamon
1 tsp
salt
2 c
sugar

eggs
1 1/4 c
oil
2 c
finely grated carrots

ICING:

1
8 oz. pkg. cream cheese
1 stick
butter
1 box
powdered sugar
1 tsp
vanilla (optional)
1 c
chopped nuts (optional)

Directions Step-By-Step

Sift dry ingredients together. Mix eggs, cooking oil and carrots together and add to dry ingredients. Beat hard. Bake in 2 layer pans at 350 degrees for 45 minutes.

Icing: Cream butter and cream cheese with electric mixer. Add sugar gradually. Add vanilla for better consistency of icing. Blend in nuts and spread on cake.

Note: nuts (pecans or walnuts) may be added to cake batter in addition to nuts sprinkled over the cake icing. Other variations to include are drained pineapple, bananas, dates, etc.
