I like a good brownie, and I love a good cheesecake, so why not combine the two together… It’s a marriage made in heaven.

This dish is not about ingredients, as much as it is about presentation.

So, you ready… Let’s get into the kitchen.

CHEESCAKE INGREDIENTS

8 oz
cream cheese, room temperature
1/4 c
sugar, granulated variety, or sugar substitute
1 large
egg
1 tsp
vanilla
1 medium
lemon, just the zest

BROWNIE INGREDIENTS

4 Tbsp
sweet butter, unsalted (use clarified, if possible)
1/2 c
semi sweet chocolate
1/2 c
bitter sweet chocolate
1/2 c
sugar, granulated variety, or sugar substitute
2 large
eggs
2/3 c
flour, all-purpose variety
1/2 tsp
baking powder
1/4 tsp
salt, kosher variety, fine grind

Directions Step-By-Step

THE CHEESECAKE

Gather your ingredients.

Place all of the ingredients for the cheesecake into a bowl.

Use a whisk or blender stick to thoroughly mix all the ingredients, and reserve.

THE BROWNIE

Add some water to a double boiler, and place over medium heat.

Add the butter, and both types of chocolate.

Stir the mixture until blended.

Remove from the heat, and then add the sugar, and eggs.

Stir until fully incorporated.

Add the flour, baking powder and salt to a large bowl, and whisk to combine.

Add the melted chocolate, and stir until fully incorporated.

THE ASSEMBLY

Chef’s Note: I’m using a mini cheesecake pan to bake these; however, you could put them into simple paper baking cups.

Place a rack in the middle position, and preheat the oven to 320 (160c).

Add 1 tablespoon of the brownie mix to the bottom of the paper baking cup, or pan.

Add 1 tablespoon of the cheesecake mixture to the top of the brownie mix.

Complete by adding 1 tablespoon of brownie mix to the top.

Chef’s Note: Repeat for the remaining brownie/cheesecakes.

Place into the preheated oven until fully baked, about 20 to 25 minutes.

Chef's Note: Allow to fully cool before serving.

PLATE/PRESENT

Place one on a serving dish, and garnish with a bit of whipped cream, and maybe a lemon twist. Enjoy.
