My mom loves Prune Cake, for her birthday this year, I tried and failed a couple of recipes. By the time of her 76th birthday weekend, I had a cake to present to her. She was surprised and happy. My mom also gobbled down 2 nice size pieces. I think this one is a HIT !

Ingredients

BEFORE MIXING THE CAKE, CHOP PRUNES. IN POT HEAT PRUNE JUICE UNTIL BOILING. BOIL 5 MIN. CUT OFF HEAT, AND ADD PRUNES TO LIQUID. PUT LID ON POT , AND LET COOL

1/2 c
prune juice
1 c
prunes, chopped and cooked in prune juice (processed in blender)

DRY INGREDIENTS

2 c
all purpose flour
1 tsp
baking soda
1 tsp
salt
1 tsp
cinnamon
1/4 tsp
nutmeg
1/4 tsp
clove, ground
1/4 tsp
allspice, ground
1/2 c
sugar

WET INGREDIENTS

1 c
butter milk
1 c
oil
2 medium
eggs
1 Tbsp
vanilla extract

OPTIONAL

1 c
walnuts chopped

Step-By-Step

1In pot add prunes and water,bring to boil. simmer for 5 minutes.Let cool
2Add prunes and liquid to blender, blend well
3Sift and add all dry ingredients in mixing bowel, mix well
4Add eggs,milk,oil,vanilla mix until batter is all wet.
5Add prunes to wet batter, mix well
6Pour batter in prepared pan, Bake at 350 for 40-50 minutes, or until toothpick is clean after incerting in center.
7When done, removed from oven and let cool completely.
