Ultra-Simple (In Fact, Cheating) Weekday Morning Pancakes

Is it still a recipe if it uses a mix?

The banana imparts a wonderful, subtle creaminess and sweetness to the batter.

This works best with bananas that are ripe but not too ripe (have some little brown spots but are not mostly brown), but any banana will do.

The recipe is easy to double.

Ingredients

2/3 c
arrowhead mills organic buckwheat pancake & waffle mix

ripe banana
2 tsp
canola oil
2 tsp
agave nectar
3/4 c
almond, soy, or other nondairy milk
1 tsp
vanilla
1/2 tsp
cinammon
1/4 c
chopped pecans
1/3 c
blueberries

Directions Step-By-Step

Stir all ingredients except blueberries only until lumps disappear.
