Gluten Free Coconut Flour Pancakes

all purpose gluten free flour (i use king arthur)
liquid (i used unsweetened vanilla hemp milk)
Grind flax seeds into a meal. Soak in 2 Tbsp. water for 5 minutes.
Mix remaining ingredients. Stir in the flax seed meal in its water.
Cook as you would any pancake recipe. These will take a bit longer to cook through than a regular pancake batter.
Serve with fruit topping, honey, or maple syrup.
