Clean & Healthy Spanish Scramble

olive or coconut oil
Dice and chop peppers, onion and cilantro. Slice avocado and set aside. Scramble egg and add all seasonings and set aside
Put coconut or olive oil in small saute pan and heat.
Saute peppers, onions and half cilatro in oil
Pour egg over saute mixture in pan ... stir until egg is cooked
Put on plate, put sliced avocado on top and garnish with remaining cilantro. Yummm! Enjoy!
