BACON SPINACH FRITTATA -- BONNIE'S

I created this recipe for breakfast one morning. It may be a simple recipe, but it is not simple in taste. It is made from most ingredients that you have in your refrigerator. This is a high protein dish, perfect for Atkins followers. Enjoy!

Ingredients

eggs slightly beaten
1/2
white onion, small dice

tablespoon olive oil

tablespoons of cream

cup raw spinach leaves
1/2
cup sharp cheddar cheese
1/4
teaspoon chipotle pepper
2
slices of cooked crisp bacon, crumbled
season to taste at the table with salt and pepper if desired

Directions Step-By-Step

Assemble all the ingredients, fry the bacon crisp, cool and crumble. Thin slice the sharp cheese and dice the onion.

Saute the onion in a medium non stick skillet in one tablespoon of olive oil over medium low heat until golden brown.

Add the cream to the onions. Stir for a minute or two until the mixture thickens. This carmelizing will make the onions taste very sweet and give the frittata a nice flavor.

Add the beaten eggs and chipotle pepper to the mixture.

Add the spinach leaves.

Add the cheese slices.

Turn the heat to low and let the frittata cook until it sets. Add a glass lid after one minute. The frittata is done when the edges turn brown and the mixture is solid.

Add the bacon, and serve immediately.
