BACON SPINACH FRITTATA -- BONNIE'S

- eggs slightly beaten
- white onion, small dice
- tablespoon olive oil
- tablespoons of cream
- cup raw spinach leaves
- cup sharp cheddar cheese
- teaspoon chipotle pepper
- slices of cooked crisp bacon, crumbled
- season to taste at the table with salt and pepper if desired
Saute the onion in a medium non stick skillet in one tablespoon of olive oil over medium low heat until golden brown.
