Ingredients

3 c
shredded zucchini (2-3 medium
1 2/3 c
sugar
2/3 c
vegetable oil
2 tsp
vanilla extract
4
large eggs
3 c
all purpose flour
2 tsp
baking soda
1 tsp
salt
1 tsp
cinnamon
1/2 tsp
ground cloves
1/2 tsp
baking powder
1/2 c
chopped nuts (optional)
1/2 c
raisins (optional)

Step-By-Step

1Move oven rack to the lowest position. Preheat oven to 350 degrees. Grease and flour 2-9 inch loaf pans.
2Mix Zucchini, sugar, oil, vanilla and eggs in a large bowl. Stir in remaining ingredients except nuts and raisins. Then gently stir in nuts and raisins. Divide batter evenly between the 2 pans.
3Bake for 1 hour 10 minutes to 1 hour 20 minutes or till knife comes out clean.
Cool 10 minutes in pans and then turn out onto a wire rack to cool completely.
