Ingredients

2 c
rice & quinoa flour
1 medium
avocado
1 c
honey
2
overripe bananas
2 tsp
baking powder
1 tsp
baking soda
1 tsp
salt
1 tsp
lemon juice
1/4 c
vegetable oil
1/4 c
cocoa powder
2
squares semi-sweet chocolate, chopped

Step-By-Step

1Per serving (1/8th of loaf)

2Pre-set oven to 350 Degrees
3Scoop 2 cups of the rice and quinoa blend (I used TruRoots Organic Gluten Free Sprouted rice and Quinoa blend) into a blender, and blend on high until consistency of flour.
4In a mixing bowl, blend avocado and banana until pureed. Add in honey, baking soda, baking powder, salt, lemon juice, and vegetable oil.
5In separate bowl, sift together rice/quinoa flour and cocoa powder.
6While mixer is on low, gradually add flour mixture until well combined.
7Stir in chocolate chips. Spread batter in greased loaf pan.
8Bake for 45-50 minutes depending on your oven.
