~ Berr - iffic Cream Parfait ~
- 1 small
- ( 10 ounce ) pound cake - i used a store bought
- 1 c
- each - blackberries, strawberries and blueberries
- 1/4 c
- orange marmalade
- 2 - 3 Tbsp
- orange juice
- 1/2 c
- whipping cream
- 4 oz
- cream cheese, softened
- 1 c
- confectioners' sugar
- 1/2 tsp
- each - orange extract & orange zest
THIS WOULD ALSO BE GREAT WITH JUST VANILLA PUDDING, IF IN A HURRY
In a small bowl, beat the cream until forms stiff peaks.
In another bowl, beat cream cheese, confectioners' sugar, extract and zest, until smooth. Now, fold in the whipped cream. Chill while preparing cake.
Slice cake into 12 slices, 1/2 inch wide. Brush one side with orange juice, then brush same side with marmalade. Cut each slice in half or 4ths.
