Ingredients

1 pkg
refrigerated pie crust
2
egg yolks, beaten
green food coloring (preferably the paste)

FILLING:

1-1/2 lb
sweet potatoes (or yams..the orange ones)
1 Tbsp
butter softened
1/4 tsp
ground cumin
salt and pepper to taste

Step-By-Step

1peel, cook and puree sweet potatoes
2combine pureed potatoes with butter, cumin and salt and pepper
3Preheat oven to 450 while you assemble empanadas
4unfold pie crust onto a floured board, using a 3" biscuit cutter cut 20-25 circles
5scoop a tsp of filling into the center of each circle, fold over to a half moon shape, seal well with a fork or your fingers
6combine egg and food coloring and brush onto empanadas
7bake 10-12 minutes until crisp and cooked through.

You could put a dipping sauce with this if you want, maybe a warm "blood" marinara or a garlic butter??
