I have worked on this recipe for a while now and I think I have perfected it. It is so good...way better than whole wheat.

Prep:

15 Min

Cook:

45 Min

Ingredients

3 c
warm water
4 tsp
yeast
1/2 c
honey, molasses, brown sugar or white sugar - your choice
1 Tbsp
salt
2 Tbsp
melted butter

MIX WELL AND LET STAND FOR 5 MINUTES - THEN ADD:

4 - 5 c
rye flour
2 c
white flour

STIR ALL INGREDIENTS WELL. USE ENOUGH FLOUR TO MAKE A STICKY DOUGH. YOU DON'T REALLY HAVE TO KNEAD THE DOUGH. COVER AND LET STAND UNTIL DOUBLE. I LET IT STAND SEVERAL HOURS, UNTIL IN ALMOST COLLAPSES ON ITSELF. SHAPE INTO LOAVES AND LET RISE.

Directions Step-By-Step

1
BAKE AT 350 DEGREES FOR 35-45 MINUTES. I USE A MEAT THERMOMETER AND COOK IT UNTIL IT REACHES 180-190 DEGREES
2
I sometimes add about a 1/2 cup of old fashioned oats that I have blended into flour and 1 cup of old fashioned oats, when I am adding the rye flour. Then I only use 4 cups of rye flour
