I just have to share this easy and delicious recipe! There are only 3 ingredients in this recipe. These muffins are so easy I almost felt guilty making them! Weight Watchers shows they are 97 calories per muffin, or 2 points each.

The beauty of this recipe is that you can use any cake mix you like- spice cake, yellow, or even chocolate!

The muffins came out incredibly moist. They do not taste like a low calorie muffin- that's for sure! Yummy- and a super big hit in my house.

The original recipe states you should get 24- but I only got 18. Maybe I made my muffins huge! :)

yellow cake mix (18 oz)
1 can(s)
pumpkin (15 oz)

Directions Step-By-Step

Mix all ingredients with a mixer. Pour into muffin cups and bake at 350 for 20-25 minutes.

This recipe sounds awesome, using either yellow or spice cake mixes, I will add the cinnamon chips and wonder how adding pecan pieces would dress it up! Anyone tried adding nuts, yet?

These muffins are so moist and delicious...I add a cup of Hershey's cinnamon chips to the batter (just fold in) and bake as directed in mini muffin tins. I usually get 24 out of a recipe...the staff loves them at work.

I have also had these made with boxed Spice Cake & they are WONDERFUL!! It's the same recipe, just exchange!
